1 cauliflower

50 grams of plain flour

40 grams of butter

130 grams of mature Cheddar Cheese

450 ml of milk

1 teaspoon of English mustard

Cauliflower Preparation

You should start by preparing the oven to 180ºC. Get a large pan and half-fill it with water and bring it to a boil over medium-high heat. Make sure that you remove the outer leaves from an entire cauliflower and chop the rest into florets. Make sure that they are in even sizes. The leftover stem, as well as the leaves, could be chopped up and cooked in stir-fries, so keep them!

Now, add the florets to the pan and bring it to a boil again. Cook it for 5 minutes more or until the cauliflower becomes tender, but still firm enough to hold its shape. Drain and set it aside.

So, for making a cheese sauce, start by making a roux. Melt 40 grams of butter in a pan on a low heat and stir in 50 grams plain flour. Cook and stir it constantly for a few seconds until it becomes a smooth and thick paste.

Now, measure about 450ml of milk and pour a little in the pan and stir it until smooth. Keep adding milk, while continuously stirring until combined. For 2 minutes, gently cook it and stir it to avoid the bottom from burning. Add the 80 grams of mature cheddar cheese, making sure it’s grated and a teaspoon of mustard and stir until fully melted. Season accordingly and remove it from the heat.

Transfer, Bake and Serve

Pour some of the cheese sauce into a deep and ovenproof dish. Add the cauliflower and pour the rest of the cheese sauce over to cover it completely. Now, grate 50 grams of cheddar cheese at the top and place it on a baking tray.
